Potato lovers, this one’s for you! Turn your leftover mashed potatoes into deliciously soft vegan flatbread with this easy recipe. Perfect for a quick snack.
The recipe only makes 4 breads, so you should double or triple the dough if you have more mash available.

- 3 dl leftover mashed potatoes
- 1–2 dl yeast bread flour OR wheat flour
- 0.25 teaspoon salt
- 1 teaspoon canola oil
Instructions
- Preheat the oven to 250 degrees Celsius (475 Fahrenheit).
- Mix the dough ingredients together in a bowl. Note. The amount of flour and salt to be added depends on how firm the mash is and how much salt is already in it.
- Take about 2 tablespoons of dough and shape it into a loose ball between your hands.
- Place the ball on a baking sheet lined with baking paper and pat it with floured hands into a flat disk.
- Poke holes in the disks with a fork and bake them in the oven for about 15 minutes, until they have risen and gotten a bit of colour.
