Description
This delightful leek and mushroom pie is ideal for everyday dining and gatherings. Its smoked tofu filling adds a flavorful touch and makes slicing a breeze.

- 1 serving of vegan pie dough (savory version)
- 1 small leek
- 100g of button mushrooms
Savory tofu filling
- 300g of smoked tofu
- 2.5 dl Alpro Cooking soy cream
- 1 tablespoon of canola oil
- 2 tablespoons of cornstarch
- 0.25 teaspoons of salt
- 0.25 tsp black pepper
For topping
- 100g of vegan grated cheese
Instructions
- Prepare the pie dough and put it in the cold to wait.
- Rinse the leek and cut it into slices with a maximum width of 1 cm.
- Clean the mushrooms and chop them into smaller pieces.
- Sauté the leek and mushrooms in a frying pan until they are soft and translucent. However, do not overcook.
- Preheat the oven to 200 degrees Celsius, or 400 F.
- Combine the ingredients for the smoked tofu filling in a blender and puree them until smooth. You can also use a stick blender or food processor.
- Roll out the pie dough into a thin plate and place it in the pie pan, e.g. according to these instructions.
- Pre-bake the pie crust on its own for 10 minutes.
- Add the leek and mushroom filling on top of the pre-baked pie base.
- Add the smoked tofu filling.
- Sprinkle grated cheese on top.
- Bake in the oven for 25-30 minutes, until the surface of the pie is colored. You can use air circulation in the final stage to enhance the browning.
