Classic Leek and Mushroom Pie in a Vegan Version

This delightful leek and mushroom pie is ideal for everyday dining and gatherings. Its smoked tofu filling adds a flavorful touch and makes slicing a breeze.


  • 1 serving of vegan pie dough (savory version)
  • 1 small leek
  • 100g of button mushrooms

Savory tofu filling

  • 300g of smoked tofu
  • 2.5 dl Alpro Cooking soy cream
  • 1 tablespoon of canola oil
  • 2 tablespoons of cornstarch
  • 0.25 teaspoons of salt
  • 0.25 tsp black pepper

For topping

  • 100g of vegan grated cheese


  1. Prepare  the pie dough  and put it in the cold to wait.
  2. Rinse the leek and cut it into slices with a maximum width of 1 cm.
  3. Clean the mushrooms and chop them into smaller pieces.
  4. Sauté the leek and mushrooms in a frying pan until they are soft and translucent. However, do not overcook.
  5. Preheat the oven to 200 degrees Celsius, or 400 F.
  6. Combine the ingredients for the smoked tofu filling in a blender and puree them until smooth. You can also use a stick blender or food processor.Ezoic
  7. Roll out the pie dough into a thin plate and place it in the pie pan, e.g.  according to these instructions.
  8. Pre-bake the pie crust on its own for 10 minutes.
  9. Add the leek and mushroom filling on top of the pre-baked pie base.
  10. Add the smoked tofu filling.
  11. Sprinkle grated cheese on top.
  12. Bake in the oven for 25-30 minutes, until the surface of the pie is colored. You can use air circulation in the final stage to enhance the browning.
