- 2 – 3 bananas (250 g = approx. 2.5 dl puree)
- 100 g margarine
- 1 dl soy yogurt (e.g., Alpro Greek Style No Sugars)
- 2 tsp vanilla extract
- 4 dl wheat flour
- 1 dl dark cane sugar (add extra 0.5 dl if bananas aren’t very ripe)
- 2 tsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 0.5 tsp salt
- 0.5 dl ground almonds, hazelnuts, or other nuts
Instructions
- Preheat the oven to 175 degrees.
- Melt the margarine.
- In a bowl, mash the bananas with a fork.
- Add the melted margarine, soy yogurt, and vanilla extract to the bananas. Mix well.
- In another bowl, combine all the dry ingredients. Mix thoroughly.
- Gently combine the wet and dry ingredients to form an even batter. Be careful not to over-mix.
- Grease the loaf pan.
- Pour the batter into the pan.
- Bake for about 50 minutes. Check the doneness of the banana bread with a cocktail stick.
- Allow the banana bread to cool slightly before removing it from the pan.
