  • 23 bananas (250 g = approx. 2.5 dl puree)
  • 100 g margarine
  • 1 dl soy yogurt (e.g., Alpro Greek Style No Sugars)
  • 2 tsp vanilla extract
  • 4 dl wheat flour
  • 1 dl dark cane sugar (add extra 0.5 dl if bananas aren’t very ripe)
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.5 dl ground almonds, hazelnuts, or other nuts


  1. Preheat the oven to 175 degrees.
  2. Melt the margarine.
  3. In a bowl, mash the bananas with a fork.
  4. Add the melted margarine, soy yogurt, and vanilla extract to the bananas. Mix well.
  5. In another bowl, combine all the dry ingredients. Mix thoroughly.
  6. Gently combine the wet and dry ingredients to form an even batter. Be careful not to over-mix.
  7. Grease the loaf pan.
  8. Pour the batter into the pan.
  9. Bake for about 50 minutes. Check the doneness of the banana bread with a cocktail stick.
  10. Allow the banana bread to cool slightly before removing it from the pan.
