Today, I’m excited to share with you my favorite banana bread recipe. It’s a simple yet delicious treat, perfect for any time of the day.

To me, banana bread is more of a coffee cake than traditional bread. But regardless of what you call it, it offers a delightfully sweet and moist texture that pairs perfectly with your favorite cup of coffee or tea.

What sets this recipe apart is the addition of a crunchy nut crust that offers a delightful texture contrast to the soft bread. And, to make the bread even softer and more flavorful, I’ve included soy yogurt in the ingredients, which helps to create a wonderfully fluffy texture. The recipe also contains ripe bananas and a touch of cinnamon for a subtly spiced flavor.

So, let’s get started on this easy and satisfying recipe that’s sure to be a hit with your family and friends.

The crucial role of baking soda in banana bread

Based on my tests, I would say that 1 teaspoon of baking soda is just the right amount for this recipe.

Baking soda is necessary to make the banana bread rise. Banana puree makes the dough quite heavy, so the cake can easily be too dense if it doesn’t rise properly. It won’t help even if you double the amount of baking powder – it cannot replace baking soda.

On the other hand, an excessive amount of baking soda will ruin the whole recipe. For instance, tripling the amount of baking soda won’t make the cake rise any more, but it will spoil its taste.

How to make perfect vegan banana bread – step by step

Preheat the oven to 175 degrees Celsius (or 350 degrees F).

Melt the margarine and set it aside to cool slightly.

In a bowl, mash the bananas using a fork until smooth.

Add the melted margarine, soy yogurt, and vanilla extract to the mashed bananas. Mix well to combine all the ingredients thoroughly.

In another bowl, combine the dry ingredients. Mix well to ensure even distribution.

Slowly incorporate the dry ingredients into the wet ones, stirring until you achieve a smooth batter. Be careful not to over-mix, as this could cause the batter to fail.

Grease a loaf pan to prevent the banana bread from sticking.

Pour the batter into the prepared loaf pan, spreading it out evenly.

Bake in the preheated oven for about 50 minutes or until the top is golden and a cocktail stick inserted into the center comes out clean.

Once baked, remove the banana bread from the oven and allow it to cool in the pan for a few minutes.

Carefully transfer the banana bread from the pan to a wire rack to cool completely before slicing.

How to determine if your banana bread is fully baked

Bake the banana bread at 175 degrees Celsius (or 350 degrees F) for about 50 minutes. The banana bread may look cooked after 40 minutes, but is probably still raw in the middle. If the surface starts to darken too much, protect it with a strip of baking paper or foil.

Finally, test whether the cake is cooked with a cocktail stick or a match. No wet dough should stick to the stick. Continue baking if necessary.

How to freeze banana bread

Banana bread freezes well, which means you can bake it in advance. Banana bread should be sliced before freezing so that it is easy to thaw later. Wrap the sliced banana bread first in baking paper and then in foil before freezing:
