I’m starting a new recipe series with the theme “Easy and Affordable Everyday Food.” Prices are rising everywhere at an alarming rate, but luckily, many vegan dishes are really inexpensive to make. And they’re healthy too!

The first recipe in the series is this super easy vegan bolognese sauce made from soy mince and lentils. The recipe is rich in protein and fiber. Lentils not only provide protein but also flavor – without them, the result wouldn’t be as good.

You can make a large batch of this sauce at once if you want it to last for several days. You can also freeze some for later.

This is such a simple dish that even beginners can make it.

Equipment

For this recipe, you’ll need:

  • a grater
  • a large pot for cooking pasta
  • a slightly smaller pot (or a frying pan with high sides) for the sauce
  • and preferably a colander to easily drain the pasta cooking water

Ingredients

This recipe uses only basic ingredients, so you might already have all the ingredients in your pantry! You’ll need:

  • Pasta
  • Dark soy mince
  • (Red) lentils
  • Crushed tomatoes
  • A couple of carrots
  • Seasonings: salt, black pepper, onion powder, garlic powder, ground coriander, oregano, basil, and dark balsamic vinegar

Carrots are not essential, and the sauce will still be delicious without them. However, adding carrots makes the sauce healthier and higher in fiber, so it’s a good idea to include them if you have them in your pantry.

How to Make the Sauce

As mentioned above, this is a super easy recipe. You only need to grate the carrots and then add all the ingredients to a pot and simmer for about 15 minutes.

And the best part is that you can add the ingredients to the pot in any order you like. Easy!

Serve the pasta and sauce with this easy vegan parmesan cheese.

  • 500g pasta
  • 2 carrots
  • 2 dl dark soy mince
  • 7 dl water
  • 500g crushed tomatoes
  • 1 dl dried (red) lentils
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 0.75 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp ground coriander
  • 1.5 tsp dried oregano
  • 1.5 tsp dried basil
  • 1 tsp dark balsamic vinegar

In addition:


Instructions

  1. Cook the pasta in a large pot according to the package instructions.
  2. Peel and grate the carrots.
  3. Add all the sauce ingredients to a smaller pot and simmer them over low heat for about 15 minutes, until the carrots and lentils are tender.
