Based on my tests, I would say that 1 teaspoon of baking soda is just the right amount for this recipe.
Baking soda is necessary to make the banana bread rise. Banana puree makes the dough quite heavy, so the cake can easily be too dense if it doesn’t rise properly. It won’t help even if you double the amount of baking powder – it cannot replace baking soda.
On the other hand, an excessive amount of baking soda will ruin the whole recipe. For instance, tripling the amount of baking soda won’t make the cake rise any more, but it will spoil its taste.
How to make perfect vegan banana bread – step by step
Preheat the oven to 175 degrees Celsius (or 350 degrees F).
Melt the margarine and set it aside to cool slightly.
In a bowl, mash the bananas using a fork until smooth.
Add the melted margarine, soy yogurt, and vanilla extract to the mashed bananas. Mix well to combine all the ingredients thoroughly.
In another bowl, combine the dry ingredients. Mix well to ensure even distribution.
Slowly incorporate the dry ingredients into the wet ones, stirring until you achieve a smooth batter. Be careful not to over-mix, as this could cause the batter to fail.
Grease a loaf pan to prevent the banana bread from sticking.
Pour the batter into the prepared loaf pan, spreading it out evenly.
Bake in the preheated oven for about 50 minutes or until the top is golden and a cocktail stick inserted into the center comes out clean.
