I’m so excited to share this recipe with all of you because it’s been a huge hit in Finland, and my readers there absolutely love it. Let’s see what the rest of the world thinks about it!
This recipe was initiated by my firstborn. She has started exploring the culinary world by trying recipes from her favorite youth magazines. There was a very promising mug cake recipe in the Girl:It magazine last year, but it didn’t really work without eggs and also, the end result was perhaps a bit too “healthy” for us anyway! (We love sugar.)
So we set out to develop our own vegan recipe. We copied the raspberries, nuts and coconut from the original recipe, but also added our own ingredients. The end result is wonderfully light, fluffy and cake-like.
It took us a couple tries (my daughter says we made 5 versions of this cake), but we are now really happy with the end result. And hey – working together to create tasty new recipes with your kiddo is always loads of fun π

What is a mug cake?
A mug cake is a cake that you can make in a microwave oven in a small container, such as a coffee cup or a tea mug. You can eat the cake directly from the mug, or it can be turned onto a plate.
This mug cake can be prepared in the microwave in less than 5 minutes. Don’t worry if you have unexpected guests and a craving for something sweet – all it takes are a couple of minutes to whip up this delightful treat.
Note that the cake is really small, enough for 1-2 people. If you are making these for several people, make a larger amount of cake dough, divide it into mugs and bake the cakes individually. It only takes 1.5 minutes to bake one cake in the microwave.
Equipment
For this recipe, you need:
- a small container, such as a coffee cup or a tea mug
- a small bowl for mixing the dough
- a microwave oven
How to make a mug cake with raspberry & coconut
The recipe is amazingly simple and even kids in primary school can make this recipe with minimal adult assistance.
Raspberries should be crushed into smaller pieces before use. You can use fresh or frozen raspberries.
Mix all the ingredients together in a small bowl.
Grease the mug and pour the dough into the mug.
Bake the cake in the microwave. The finished cake looks something like this:
You can invert the baked mug cake onto a plate, as in the picture below – you have to shake the mug slightly or tap it from the bottom so that the cake comes off.

Ingredients
- 3 tablespoons unsweetened soy yogurt
- 2 tablespoons crushed almond (or other nut)
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1 tablespoon coconut flakes
- 1 tablespoon canola oil
- 0.5 teaspoon lemon juice
- 0.5 dl wheat flour
- 3 raspberries
Instructions
- Crush the raspberries into smaller pieces.
- Mix all ingredients in a bowl.
- Grease a medium-sized tea/coffee mug or other small container. Even if you make more dough at once, fill each mug only halfway.
- Cook in the microwave at full power for 1.5 minutes.
- Invert the mug cake onto a plate or serve it directly from the mug.
